8 oz. dry whole grain penne pasta, uncooked

1 can, 14.5 oz, diced tomatoes, no salt added, drained

1/3 cup light mayo, i used Hellmann's Canola Oil mayo, no cholesterol

1/4 tsp garlic powder

1 pkg, 6 oz., refrigerated diced oven roasted chicken breast or use left over shredded or cubed chicken

10 slices fully cooked bacon, heated, chopped(i used turkey bacon, crumbled)

2 cup baby spinach leaves, coarsely chopped

 

cook pasta according to package directions.  drain and rinse under cold water until cool.

meanwhile, stir together tomatoes, mayo and garlic in large bow.  add pasta, chicken and bacon; toss to combine.  add spinach, gently toss together.  serve immediately.
