makes 1 loaf or 24 servings...


1 cup oat bran

2/3 cup golden raisins

1/2 cup chopped dried figs

1/3 cup nonfat dry milk, dry

1/2 cup molasses

3/4 cup boiling water

1 Tbsp butter or margarine or oil

2 egg whites

1/2 cup flour

1/2 cup whole wheat flour

1 tsp ground cinnamon

1/2 tsp baking soda

1/2 tsp ground ginger

1/4 tsp salt


heat oven to 350 degrees.  spray loaf pan, 9x5x3 or 8 1/2 x 4 1/2 x 2 1/2 inches with nonstick cooking spray.  mix oat bran, raisins, figs, dry milk, molasses, water, margarine and egg white in large bowl.  stir in remaining ingredients.  spread in pan.  bake 30 to 40 minutes or until toothpick inserted in center comes out clean.  cool 5 minutes.  loosen sides of loaf from pan; remove from pan.  cool completely on wire rack before slicing.
