Lentil and rice stuffed peppers 

 Made this up the other night after buying too many peppers on sale.

 

4 large green (or other color)

2 cup cooked lentles

2 cups brown rice

1 cup bread crumbs

1 small onion chopped

2 cloves chopped fine

2 eggs or (1/4 cup flax seed meal if vegan)

1/4 cup tomato paste

1/4 cup water

dash each oregano, thyme and sage and any savory herb you like.

 

Mix all well together and press tightly into peppers

Bake until the peppers are soft but with a little crunch.

 

A topping of cheese at the end might be good too.
