Makes 1 serving...


1/4 cup milk

1 egg well beaten

3 oz thinly sliced corned beef

1 slice Jack or Swiss cheese(i use Swiss cheese)

2 slices rye bread

2 Tbsp butter, clarified if possible(it really isn't that necessary)


combine the milk and egg and beat until well mixed.

make a sandwich by placing the meat and cheese between the two slices of bread.  soak the sandwich, one side at a time, in the egg mixture.

melt the butter in a frying pan over medium heat.  when the bread has absorbed the egg mixture, place it in the pan and fry one side at a time until both sides are golden brown.  serve hot.


my husband likes it for a breakfast meal and he likes to pour pure maple syrup over it... 


Hint:  if you want a more interesting sandwich, spread mustard on the bread slices before piling on the meat and cheese, or add pckle relish, sliced pickles, tomato slices, or a slice of onion....   you can also skip the egg mixture and just grill it and it is sooooo good!!!

 you can substitute sliced turkey or ham for the corned beef too...  i have done this when i can't find good corned beef and it is still wicked good!!
