makes 4 servings...  can be halved.


4 large bamboo skewers

1 pound Swordfish steak cut into 1 to 1 1/2 inch pieces

1 each yellow, green and red pepper, cut into 1 inch pieces

4 large mushrooms, cut into fourths

1 red onion, cut into 1 inch pieces

1 zucchini, cut into 1 inch pieces


1/2 cup olive oil

1 Tbsp balsamic vinegar

1 onion, diced

1/2 tsp minched fresh rosemary

1 small clove garlic, minced

1/4 tsp each salt and pepper


combine all ingredients for marinade in a bowl.  mix well.  set aside.  put all ingredients in the marinade and toss to coat.  let marinate overnight.  put the ingredients on bamboo skewers.  soak the skewers in water for 20 minutes.  alternate colors to get best effect.  put the mushrooms on both ends.  grill for 5 minutes on each side or until the swordfish is firm.  makes 4 servings.

in the winter time, you can use your broiler to make these!  comes out really good, have made them before for my husband and neighbors.  or if you live in an apartment and do not have a grill...
