makes 6 servings


1 Tbsp olive oil

1 1/2 cups chopped onions

1 large green bel pepper, chopped

1 large carrot, chopped

8 oz red potatoes, diced

1 cup corn

1 cup water

1/2 tsp dried thyme

2 cups milk or nondairy milk substitute

2 Tbsp chopped fresh parsley

1 1/2 tsp seafood seasoning, like Old Bay

3/4 tsp salt, or to taste


heat oil in Dutch oven over medium high heat.  add onions, bell pepper and carrot; cook and stir 4 minutes or until onions are translucent.

add potatoes, corn, water and thyme; bring to a boil over high heat.  reduce heat; cover and simmer 15 minutes or until potatoes are tender.  stir in milk, parsley, seasoning and salt.  cook 5 minutes more.
